Mimi's Chocolate Cake
Submitted by Joyfulleah
This is what my mom made me on my birthday every year growing up. I don't like thick layers of icing, and this one just has one thin delicious layer on top. Can't beat it!
Ingredients
- For the cake:
- 2 tablespoons vinegar
- 1 cup milk
- 2 eggs
- 2 cups flour
- 1 1/2 teaspoons baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups sugar
- 4 squares Baker's unsweetened chocolate
- 1 cup boiling water
- 1/4 lb melted butter
- 1 tablespoon vanilla
- For the icing:
- 1 box confectioner's sugar
- 1/4 lb butter
- pinch salt
- 2 teaspoons vanilla
- 3-4 tablespoons milk.
Method
- Mix the vinegar and milk and let stand for 15 minutes
- Whisk in the eggs.
- In an electric mixer, combine the milk mixture with the flour, baking soda, baking powder, salt, and sugar.
- In a small bowl, combine the chocolate, water, butter and vanilla, stirring until chocolate is melted. Add to the electric mixer.
- Pour into a 9"x13" baking dish and bake at 350F for 25-30 minutes.
- Combine together all icing ingredients and mix well. Ice cake only after it has COMPLETELY cooled.
Cook's Notes
