Jen's Versatile Bread

I make mine in a KitchenAid with the dough hook, but I can't see why it wouldn't work in a bread machine or by hand. It works well with all-purpose flour, bread flour, or whole wheat/white whole wheat flour. I really like 1/2 white whole wheat and 1/2 regular white.
Ingredients
- 4 T butter or shortening (butter tastes better. Obviously.)
- 2 T instant or bread machine yeast
- 1/2 c sugar
- 8-9 c flour
- 1 12-oz can evaporated milk (% milkfat doesn't matter)
- 1 1/2 cans water
- 1 1/2 T salt
Method
- Combine butter/shortening, yeast, sugar and 4 cups of the flour.
- In a smallish bowl, combine the evaporated milk and water, and microwave for 1 minute on high.
- Add liquid to mixer with salt and then slowly add 4-5 c more flour. Once dough no longer sticks to sides of the bowl, mix/knead for 5 more minutes.
- Dump dough into greased bowl and cover. Let rise 1 hour. Shape into loaves and let rise in greased pans, covered, for 45 minutes. Bake at 350 for 30 minutes.
- If desired, butter the warm tops of the loaves when they're done baking.
Cook's Notes
I usually end up using about 8 1/2 cups flour. Makes two 9"x5" loaves or three 8"x4" loaves.
