Spinach Tomato Pasta

Invented recipe. Serves 2. Apologies for the lack of exact quantities.
Ingredients
- Spaghetti for 2
- 2-3 tbsp olive oil
- 1 onion, chopped
- 2-3 cloves garlic, chopped
- Red pepper flakes, to taste (depends on how spicy you want it)
- 125 g/4.4 oz bacon, chopped into small pieces
- Spinach
- Cherry tomatoes, sliced in half
Method
- Cook spaghetti according to directions on pack.
- Add garlic and red pepper flakes and cook for 1 minute. Add bacon, cook til bacon is done. Add onions, cook over medium heat until caramelized (soft, slightly browned), stirring frequently. This takes somewhere around 5-10 minutes.
- Add spinach, cook til bright green and starting to wilt.
- Toss in cherry tomatoes and cook briefly, til tomatoes begin to soften. Add spaghetti. Top with grated cheese and serve.
Cook's Notes
Bonus Recipe: This makes a damn good sandwich also. I made it with brie and grainy mustard, but a harder cheese would probably be even better to counteract the softness of the onion and spinach.
