Meatballs

Mom's recipe. Sorta.
Ingredients
- 1 cup fresh breadcrumbs or panko
- 1/3 cup milk
- 1/3 cup olive oil
- 1 cup minced onion
- 1 lb ground beef
- 1 lb ground pork
- 1-2 eggs lightly beaten (depending on size of eggs)
- 1/2 cup Parmesan or Romano cheese
- 1/4 cup minced fresh parsley
- 2 cloves minced garlic
- Salt
- Pepper
- Tomato Sauce (optional, for meatballs and sauce)
Method
- Combine bread crumbs and milk and let soak for 10 minutes.
- In large skillet or sauce pot, heat oil and cook onion for 3 minutes. Remove from heat and allow to cool.
- In a large bowl combine meat, bread crumbs, cooked onion, egg, cheese, parsley, garlic and salt and pepper, and mix well. Shape into meatballs.
- Heat meatballs in skillet or sauce pot, using the rest of the oil. Brown on all sides for about 5 minutes if you are making meat sauce, 10 or so if not.
Cook's Notes
You can vary the ground meat used--all beef, all pork, or meatloaf mix (beef, pork and veal).
I recommend cooking these just with the tomato sauce. After the meatballs have been cooking for about five minutes and are browned on all sides, begin sauce.
