Tomato Sauce

This is an approximation of my mother's tomato sauce recipe, since she never makes it the same way twice.
Ingredients
- 1 Meatballs (optional)
- 2 large cans of crushed tomatoes
- 3-4 garlic cloves, crushed and chopped
- 1 large onion, chopped
- 1/2 can or 1/2 tube of tomato paste
- 1/2 to 3/4 cup of red wine
- olive oil
- 1-2 tsp oregano
- 3-4 leaves basil, cut or broken
- salt
- pepper
Method
- Heat oil in bottom of large sauce pot used to make meatballs (if using) and saute onion and garlic with salt & pepper until soft. Add tomatoes, paste, red wine, oregano, basil, salt and pepper.
- Cover and cook for at least 1 hour, longer if adding meat like meatballs or sausage.
- *In place of paste you can use sugar. If using sugar don't add until sauce is almost cooked and then add a tsp at a time, stir and taste. It takes the bitterness out.
