Notella Cookies
Submitted by tueda
So, this is the first cookie recipe I've just plain made up. They ended up pretty decent, if a little dry. I used vegetable oil in an attempt to keep it free of pasteurized dairy, but I think if you don't have that restriction, butter would be a much better solution. I plan to try that out in the near future.
I completely failed to actually measure most of the ingredients, so the numbers are very approximate.
Ingredients
- 3/4 cup raw (turbinado) sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1.5 cups hazelnuts
- 1/2 cup unsweetened cocoa powder
- 1 cup flour
Method
- Preheat the oven to 350° F.
- Mix the sugar and oil together in a mixing bowl. When thoroughly mixed, add the eggs.
- Combine the dry ingredients together in a separate bowl and slowly incorporate them into the wet ingredients.
- Spoon out the batter one teaspoon at a time onto a greased cookie sheet and bake for about 15 minutes.
